Red Velvet Cake

Made for a wedding cake consultation (might finish it off myself) this is a three tier tall red velvet cake with buttercream frosting for the outside. It dries off nicely to a slightly crunchy texture. And its completely delicious (so my other half says).

Busy weekend with cakes

Wow. In the space of a couple of hours yesterday morning, 5 birthday cakes went off to good homes.  And now we’ve had the path done to the front of the house i didn’t have to say “mind the path”  like I’ve had to do pretty much every time anyone collected in the last year.

Not everything went to plan though – the 5th cake (a skull) went out without a photo….but the other 4 birthday cakes will be coming shortly.

Buying fresh spices for Christmas cakes in Turkey

When only the freshest ingredients will do – you have to go on holiday & keep an eye out for the best sources of spices (Fethiye market) and the cheapest brandy (Dalaman airport duty free). Its 5 star brandy as well, so theres a treat for all this years Christmas cake lovers.

Another “…Ology”

An inspector called. She seemed to like what i was doing in the bakehouse that was a garage & how I was doing it – and then a week or so later…. she sent me this – very nice.  It’s one thing to feel you are doing the right things,  nice to have someone come & agree.

I just have to find a suitable window for the sticker now

Dont live local but still want to deliver cake in Tyneside?

So, you live somewhere else. What a shame you won’t see our glorious beaches, the clean air, the cheaper beer than down south, the crazily long summer evenings…

OK, you also dont get seagulls divebombing you after the chicks hatch, or long winter nights…

But maybe you’ve moved away & still have family or friends locally and want to send them a birthday or celebration cake? Well – now you can. My website has a page with PayPal built in – so you dont have to turn up with cash in your hand: You just let a stream of little electrons do the work. So far I’ve delivered cakes locally for people based in Australia & South Africa.

Keep Calm, form an orderly queue

OK, here the deal. I’m getting really quite busy for the next few months. But i certainly cant take any more orders for cakes before 10th June. So it looks like if you want a cake in the next week or so – you’re baking your own ! (see advice below…..).

Cake Portions

Cake portions – or how many will this cake feed ?

Lots of people aren’t sure about cake portions & order cakes without having a great idea about how many people a cake will feed, and that’s not what you need at a big celebration  especially a wedding, so here is a guide. Its based on 1″ square pieces for fruit cake & 1×2″ for sponges. For novelty shapes i will work with you to get the right size for your party.

Its not so easy to cut “portions” from big cakes, so this guide from Wilton will help you – Its worth a quick read before you are stood in front of a huge cake. Reading it after the wedding to find out what went wrong is …. too late ! In many of the larger venues that do multiple weddings, they will take the cake away and cut it for you before returning it on serving dishes – worth asking before though….

Cake Flavours

I make all sorts of cake flavours so the answer to your question “can you do…..” – is YES!

You know the cakes you get from the supermarkets – dry, foamy, tasteless. That’s because they are made from some ingredients that are bulked and chemicalled into submission.

Mine are made by me, at home (ok, in the converted Garage) from the sort of ingredients you would recognize: Butter, sugar, flour, jam, fruit. So of course they taste remarkably like the cakes your gran would have made – because they are made the same way ! So the cake flavours you get from me are what you expect, not a commercial version

Typically made for Christmas or weddings, these are made from great ingredients, baked slowly, cooled. And then the work starts… feeding them with brandy, turning, feeding the other side (repeat!). That takes some time, so you need to order these early.

This is the absolutely classic cake flavour. relatively simple to make & i make it with only the best ingredients. I normally use a thick layer of  buttercream and seedless raspberry jam to hold the two thick layers of moist, yummy cake together

 

 

Carrot Cake

I make this with plenty of cinnamon and other spices, lots of carrots and walnuts. This makes it a delightfully moist cake. The buttercream is fabulous as well, with an element of sharpness to round the cake off. If i’m doing this for coffee shops, it is finished with liberal amounts of nuts on the sides / top & as many little carrots (from sugar paste) as the number of servings

Chocolate Cake

I do three types of chocolate cake – one with a buttermilk recipe, one with beetroot and finally a gluten free version with almonds. All are very good so you’re sure to find one you like if chocolate is your thing.

This is a fabulously moist & tasty gluten free cake. I supply many of these each week (eek!) to local coffee shops. Its not just the gluten intolerant – everyone loves this cake in the coffee shops. It just goes to show that you can make great cakes without the gluten – you just need to choose someone that gets plenty of practice (me for instance!). I also do some egg free cakes.

Cake Maker Logo

Turns out my 1st choice as Cake Maker for logo text was an almost un-useable font. It was fine with the words “whitley cakes” but it wasn’t ok for anything else. so i swapped it for another font.

Setting up in business is scary enough  – but you also need to work out how websites work & put one together as well as doing the day to day & counting the numbers.  Good jobs its rewarding on so many levels.
